Pan-Seared Red Snapper with №1® Aruba Sea Salt
A Caribbean Classic, Finished to Perfection
Fresh red snapper is one of the Caribbean’s most celebrated fish, prized for its delicate texture and clean, naturally sweet flavor. The secret to preparing exceptional snapper isn’t complicated techniques or an overwhelming list of ingredients—it’s respecting the quality of the fish and finishing it with ingredients that enhance rather than overpower.
Hand-harvested under the Aruban sun, №1® Aruba Sea Salt adds the perfect finishing touch. Its crisp mineral crystals highlight the natural flavor of the snapper while adding a delicate texture that ordinary table salt simply cannot achieve.
Whether you’re preparing an elegant dinner for guests or a relaxed meal by the sea, this recipe celebrates simplicity, craftsmanship, and the beauty of fresh ingredients
Why Nº1® Aruba Sea Salt?
Unlike heavily processed table salt, №1® Aruba Sea Salt is naturally crystallized from Caribbean seawater and carefully harvested by hand. The larger crystal structure dissolves gradually, creating layers of flavor while preserving the snapper’s delicate taste. A light finishing sprinkle just before serving brings every ingredient together.
Ingredients
- Ingredients
- 2 fresh red snapper fillets
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- Juice of 1 fresh lemon
- 1 teaspoon smoked paprika
- Fresh parsley, finely chopped
- Freshly ground black pepper
- 1 teaspoon №1® Aruba Sea Salt, plus extra for finishing
Instructions
1. Prepare the Fish
Pat the snapper fillets completely dry using paper towels. Lightly score the skin with two or three shallow cuts to help prevent curling during cooking. Season both sides with smoked paprika, black pepper, and №1® Aruba Sea Salt.
2. Heat the Pan
Warm the olive oil in a large skillet over medium-high heat until shimmering. Add the butter and allow it to melt gently without browning.
3. Sear the Snapper
Place the fillets skin-side down. Press gently with a spatula for a few seconds to ensure even contact with the pan. Cook undisturbed for 4–5 minutes until the skin becomes crisp and golden.
4. Finish Cooking
Turn the fillets carefully and cook for another 2–3 minutes, depending on thickness, until the fish flakes easily with a fork. Add the minced garlic during the final minute, allowing it to become fragrant without burning.
5. Finish and Serve
Transfer the snapper to warm plates. Squeeze fresh lemon juice over the fish and finish with a light sprinkle of №1® Aruba Sea Salt and chopped parsley just before serving.
Chef’s Tip
The finest finishing salt is added after cooking, not during it. A final pinch of №1® Aruba Sea Salt preserves the crisp texture of the crystals and creates small bursts of clean mineral flavor with every bite.
Serving Suggestion
Serve alongside roasted baby potatoes, grilled asparagus, or a fresh Aruba tomato salad. Pair with a chilled Sauvignon Blanc or a crisp Pinot Grigio for a light, elegant meal inspired by the Caribbean.
